Bao buns stuffed with Szechuan marinated halloumi or **tofu, topped with bok choy and pickled ginger served with, kimchi, lapsang souchong pickled watermelon, and miso chili sauce

Ingredients flour, water, yeast, caster sugar, salt, baking powder, bicarbonate of soda, halloumi or **tofu, spring onion, ginger, tamari, sherry vinegar, garlic, shallots, dark soy, Szechuan pepper, Chinese cabbage, cayenne pepper, mouli, miso, sugar, garlic, nori powder, red pepper powder, watermelon, water, rice wine, lapsang souchong tea, sesame oil, vegetable oil, red onion, garlic cloves, ginger, red chilli, red pepper, cherry tomatoes, palm sugar, miso

Heating method prepare a steamer. Fill a pan with water until it is three quarters full. Place the steamer over the water, with a tight-fitting lid, bring the water to the boil. Remove the film from the box packaging and place the box and Baos into the steamer, making sure the steamer lid is on tightly. Steam over a medium heat for 15 minutes. Turn off the heat, remove the steamer lid carefully as the steam is extremely hot, remove the Bao box. Ready to dunk, load and dip.
